Endive and mashed potatoes

 

Endive on the Wadden Sea

• 20 persons

• Ingredients

  •  10 kg peeled potatoes
  •  3 to 3 1/2 kg cut endive
  •  1 1/2 to 2 kg cubes of smoked
    bacon
  •  approximately 2 litres warm milk
  •  salt/pepper
  •  nutmeg
  •  curry powder

 

 

  Preparation:

  1. Boil the potatoes until they’re
    done and make, together with the milk, the spices and a lump
    of butter, creamy mashed potatoes
  2. Fry the bacon cubes until they are crisp
  3. Put a part of the endive on the mashed potatoes and pour a part of the  
    hot bacon fat with the bacon cubes on this so that the endive crackles
  4. Mash and repeat,
    Heat for a little while (not too long, or else the endive will be cooked)
  5. Serve gravy with it for the
    interested dinner guests.

    Variation: If desired cheese cubes or cheese sauce also taste great with this
    dish or for example an onion through the mashed potatoes.
