Endive and mashed potatoes
Endive on the Wadden Sea
• 20 persons • Ingredients - 10 kg peeled potatoes
- 3 to 3 1/2 kg cut endive
- 1 1/2 to 2 kg cubes of smoked
bacon - approximately 2 litres warm milk
- salt/pepper
- nutmeg
- curry powder

Preparation: - Boil the potatoes until they’re
done and make, together with the milk, the spices and a lump of butter, creamy mashed potatoes - Fry the bacon cubes until they are crisp
- Put a part of the endive on the mashed potatoes and pour a part of the
hot bacon fat with the bacon cubes on this so that the endive crackles - Mash and repeat,
Heat for a little while (not too long, or else the endive will be cooked) - Serve gravy with it for the
interested dinner guests.
Variation: If desired cheese cubes or cheese sauce also taste great with this dish or for example an onion through the mashed potatoes.
